Fajitas with friends!
This is great if you've got friends coming over because it will serve four people and costs less than £2.00 each.
Ingredients
Smoky BBQ Fajita Kit which contains -
8 x soft flour tortillas
Spice mix
Tomato salsa
4 x chicken breasts - sliced
2 x peppers - sliced
1 x onion - sliced
1 tbsp oil
How to cook
Heat the oil in the pan and stir fry the chicken for about 5 mins
until cooked through.
Add the peppers, onions and spice mix and cook until the chicken is brown
but the veg is still crunchy.
Warm up the tortillas in the microwave by piercing the pack and heating on
full power for 35 seconds.
Grab a warm tortilla and spoon in the filling and top with the salsa.
I love these with tortilla chips topped with some melted cheese!

Chicken & Spinach Pasta
Another quick, easy and tasty one - making a cheese sauce this way guarantees no lumps as well! This serves two people and will cost less than £2.00 each.
Ingredients
200g pasta
100g frozen leaf spinach
1 tbsp oil
2 chicken breasts cut into strips
1 clove of garlic - crushed
215mls of semi-skimmed milk
15g plain flour
15g butter
70g cheddar cheese, grated
How to cook
Cook the pasta for ten minutes, add the spinach for the last four minutes of cooking time and drain well.
Meanwhile, heat the oil in a pan add the chicken strips and garlic and stir fry for four minutes until the chicken is browned and cooked through.
Remove from pan and put to one side.
Add the milk to the pan, sprinkle in the flour, then add the butter and whisk over a medium heat until thick and smooth.
Stir in half the cheese and season with salt and pepper.
Heat the grill to high - mix the chicken into the sauce with the spinach and pasta and spoon into an oven proof dish.
Sprinkle with the rest of the cheese and grill until golden.
Really nice with steamed carrots!

Sticky Pork with Rice
If you like Chinese food you'll love this recipe - it's quick, easy and healthy, serves two people and costs about £2.50 each.
2 pork steaks
4 spring onions - shredded
For the marinade
1 tbsp rice wine
3 tbsp dark soy sauce
1 clove garlic, crushed
2 tsp light muscovado sugar
How to cook
Put all the marinade ingredients into a freezer bag, add the pork and make sure it's coated.
Leave for 20minutes.
Heat the grill to medium and put the steaks on the grill pan - keep the marinade for later.
Cook the steaks for about 4 minutes until sticky and glazed.
Turn them over, spoon over some marinade and cook for another 4 minutes.
When the meat is cooked, rest it on a plate.
Put the rest of the marinade into a small pan and boil for a few seconds until syrupy.
Slice the pork, spoon over the marinade and sprinkle with the spring onions.
Serve with boiled rice and steamed green vegetables

Super Chicken Noodles
Ingredients
2 chicken breasts cut in to small strips
2 carrots peeled and cut in to small strips
1 tbsp oil
1tsp five spice powder
1 pint of chicken stock
Small can of sweet corn
150g of frozen peas
2 tbsp soy sauce
300g of 'Straight to Wok' medium noodles
How to cook
Heat the oil in a pan and add the chicken, carrots and 5 spice and cook for 5 minutes until the chicken is just turning brown.
Pour in the stock and bring to the boil. Stir well, cover and boil for 10 minutes.
Stir in the peas, sweetcorn and soy sauce and heat through for a few minutes.
Add the noodles to the pan and cook for 2 minutes.
Taste and add more soy if you like.
