Chinese Egg-fried rice!
Just like the real thing - this serves two people, it took me about 20 minutes to make and costs about £1.00 each!
Ingredients
200g long grain rice
1 mug of frozen peas
1tbsp sunflower oil
2 back bacon rashers - roughly chopped
1 red pepper - chopped
2 garlic cloves - thinly sliced
2 eggs
1 tsp Chinese five-spice powder
2 spring onions - shredded
How to cook
Fill a saucepan with water and bring it to the boil and add a little salt.
Pour in the rice, stir once and return to the boil, then turn the heat down a bit so that it boils steadily - do this without stirring for 8 minutes.
Throw in the peas and boil for another 2 minutes until the rice is tender and then drain into a large sieve.
Heat the oil in a frying pan and fry the bacon for 3-4 minutes until crispy and then add the peppers and the garlic and cook for another 2 minutes.
Beat the eggs, pour into the pan and fry until the egg just sets.
Put in the Chinese five-spice powder and add the rice and peas.
Top with the shredded spring onion and serve with some soy sauce.

Stir fries always a good option for busy, health concious people on a budget.
ReplyDeleteAlso a great idea to have another use for the 5 spice you would have brought for the chicken noodle dish.
We are going to try this recipe the the girls at the weekend, they will love cooking a cousin Max recipe!
